The Forged Olive peeling knife is the smallest knife in the Olive series. A light knife with a narrow blade. You use this knife particularly for peeling fruit and vegetables and for small, practical cutting tasks. The Forged Olive knives are made of Japanese 440C Steel with a hardness of 58 Rockwell. All Forged knives are hand-forged, have a blade thickness of 2 mm and a cutting angle of 18 degrees. Comes in a luxury wooden case, with a 10-year guarantee.
